I don’t know about you, but I’m the one responsible for doing about 95% of the cooking in our house. When the weather cooperates, hubby does enjoy grilling for us, but otherwise it ends up being my job to make dinner every night. Fortunately, Little Crafter is an aspiring chef, but it’ll be another few years before I can turn him loose in the kitchen.
By the time the weekend rolls around, I’m tired and just want to relax…anyone else feel the same way? Sunday is the absolute hardest day to motivate myself to cook a meal. So, I thought it might help to come up with a game plan. What if we declared Sundays “Soup and Sandwich” days? I could make the soup ahead of time when I’m not as exhausted, then toss it in the crock pot on Sunday morning before we leave for church. And sandwiches are easy! As long as I’ve got some yummy fresh ingredients on hand, I don’t mind making those up to go along with the soup. It’s way easier than actually cooking a full meal, right?

You know I’m not much of a chef, so I didn’t have a ton of recipes on hand. I wanted some ideas for how to make a grilled cheese more interesting and some easy recipes for some of our favorite soups, so I headed over to Foodie and started browsing. I found ten delicious looking sandwich ideas and ten yummy soup recipes and added them to a “Soup & Sandwich Sundays” collection so I can refer back to it and mix and match things I think would make good pairings.

Soup and sandwiches, especially grilled cheese, is the second best dinner. Second only to breakfast for dinner. We call it Bupper!

We do crockpot meals or sandwiches for lunch after church on Sundays. Dinner is fend for yourself..meaning whatever you can find. I don’t have little ones so this is super easy for me to do.

I love the idea of soup and sandwich Sundays although Sundays are actually the days we have the most time to cook. And I’m lucky enough that my husband does about 75% of the cooking because he enjoys it.
