One of our family’s favorite types of cuisine is Mexican. Every Tuesday, Little Crafter insists on having tacos {thanks a lot, LEGO movie…}, and we also enjoy fajitas, quesadillas, and other dishes with a Mexican flavor. Recently, a friend introduced us to this Chicken Tortilla Soup recipe she created, and we’re hooked! The best part is that it’s ridiculously easy to make for a non-chef like me. All you have to do is put a bunch of things in the crockpot and let it work its magic. This also works wonderfully as a freezer meal.
Chicken Tortilla Soup
Ingredients
- 1 lb Boneless Skinless Chicken Breasts
- 1 can corn
- 1 can black beans
- 1 28 oz can petite diced tomatoes
- 1 onion
- 2 red peppers
- 1 cup chicken broth
- 4 packets of fajita seasoning {we use Old El Paso}
Instructions
- Dice the onion and red peppers.
- Combine all ingredients in your slow cooker.
- Cook on low for 4-6 hours.
- Serve topped with your choice of shredded cheese, sour cream, and tortilla chips.
